Whole Wheat Pumpkin Pancakes and Day 3

Day 3 of 366...




Ingredients:
1 1/2 cups whole wheat flour
1 teaspoon baking soda
2 teaspoons baking powder
1/4 teaspoon salt
2 teaspoons ground cinnamon
1/4 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1 1/3 cups buttermilk
1 cup mashed/canned pumpkin
2 eggs
1/2 cup sour cream
2 teaspoons vanilla extract
2 tablespoons brown sugar



Directions:
  • In a large mixing bowl, whisk together the first 7 ingredients (dry). Set aside.
  • In a separate mixing bowl, whisk together the buttermilk, pumpkin, eggs, sour cream, vanilla, and brown sugar.
  • Add wet mixture to dry and stir gently just until a batter forms (can be lumpy).
  • Cook pancakes on a greased and pre-heated griddle or skillet. Ladle batter onto griddle, spreading it out slightly if needed. I used a 1/4 cup measure and made 18 small/medium pancakes.

Finished Product and Review:


It's getting really tedious and I'm never really saying anything different for all the categories. I feels like they all kind of flow together anyway. I am going to start giving my reviews under the finished product and just do one major review! :)

These pancakes are awesome! My three year old is the world's stubbornest pickiest eater and this was the meal he finally ate! I felt so good. Everyone loved them and the prep and cook was super easy. The biggest issue I ran into is that I have never made pancakes this color. I had a hard time telling if it was time to flip them. My advice would be to wait until a little after you think they are done. The color almost looks like a burnt color but they aren't burnt! :)

Day 3 of 366... We're on a roll! Today was a good day. Andy went back to work and I feel like we're kind of back in the swing of things.

Yum! Hubby heard of a (pricey) gluten-free flour alternative that you use exactly as you would use regular flour. Might be giving these a try if we try it! :) LOVE pumpkin!
