Egg Burrito Casserole

This is one our favorite breakfast for dinner meals. We have it often. I hope you enjoy it!

Egg Burrito Casserole
1 pound sausage
8 eggs + 1/4 cup water, beaten
2 cups frozen hash browns
2 cups shredded cheddar, divided
1 can cream of chicken soup
1 cup sour cream
8 -10 flour tortillas

Brown the sausage.

Cook the hash browns.

Scramble eggs. Mix sausage, hash browns, eggs and 1 cup of cheese together.

Mix cream of chicken soup and sour cream.

Spread 1/3 cup of prepared sauce in bottom of  9x13 baking dish. Spoon mixture into tortillas. 
Roll and place seam down in dish.

Spread remaining mixture of top of tortillas. Cover completely.

Sprinkle with remaining cheese. Cover and bake at 350 for 30 minutes.

Ooooh! I bet this would be FABULOUS with my homemade gf cream of mushroom soup and some corn tortillas. I'm thinking breakfast for dinner, even. My guys will probably thank you! So thanks! :) <3
